  • 200g packet Coles Brand streaky bacon

  • 6 Coles Brand Australian free range eggs

  • 1/3 cup (80ml) milk

  • 1 clove garlic, crushed

  • 1/2 cup (60g) tasty cheddar, grated

  • 1/4 cup basil, chopped

  • 4 Perino tomatoes, halved

  • Mixed salad leaves, to serve

  • Perino tomatoes, extra, to serve

  • Coles Bakery Pane di casa bread, sliced, to serve


  • Step 1

    Preheat oven to 200C. Grease 4 holes of a 1 cup (250ml) Texas muffin pan. Line base and side of each hole with 2 bacon rashers, cutting to fit.

  • Step 2

    Whisk eggs, milk, garlic, cheddar and basil in a bowl. Season. Divide among holes. Top with tomato. Bake for 20 mins or until set. Set aside in pan for 5 minutes to cool. Run a knife around each hole to loosen pies and carefully remove from pan. Serve with salad leaves, extra tomatoes and bread.
